ST Helens Oysters
St Helens Oysters is a premium seafood business located at St Helens, on the East Coast of Tasmania.
The marine farming operation consists of an onshore oyster processing facility with an on-site cool room, forklift, 250 hp Yamaha motor, and 8 metre aluminium barge used to access intertidal and subtidal marine farm leases. The business currently produces over 50,000 dozen oysters per year.
There are currently three full-time employees working onsite with addition harvest staff being contracted as needed. Oysters are grown to a variety of market sizes on average between 14 and 18 months, using a combination of subtidal and intertidal methods. The oysters are shipped to the mainland and sold to wholesale markets where demand continues to exceed supply. The unique ability to switch stock between intertidal (lease 9) and subtidal (lease 231) provides excellent shell growth and rapid fattening for market.
The 1,388-hectare Georges Bay is the marine gateway to St Helens and the location of St Helens Oysters marine leases 231 and 9. Georges Bay marine farming leases are held in high regard by the industry due to the pristine location where conditions are optimal for the growth of premium oysters:
- Ability to harvest oysters 12-months of the year
- Ideal water temperature conditions
- Nutrient-rich water supply fed from salt and fresh water sources
- Optimal conditions to grow a wider selection of oyster sizes
- Accessible location supported by quality logistics
- Product reputation: quality product sought-after by wholesalers and retailers
The business has experienced consistent growth over the past three years and as potential to expand oyster production and enter other aquaculture markets such as shellfish and seaweed.
